Spiderman Beet Cookies

It can be hard getting kids to try new foods, especially something as earthy as beets. I'm constantly trying to come up with different healthy foods to introduce into my nanny kids' diet. Whether it's a new vegetable, a protein or a healthy fat, they're always skeptical. I use certain foods like spinach, sweet potato and avocado in so many recipes, but I was motivated to do something unique this week. Which brings us to the beets. It was Spiderman's biggest fan's second birthday and I wanted to make a Spiderman themed treat. Beets can act as a natural dye, so I started brainstorming a way to create tasty, beet-packed cookies.

 

I decided that cake box cookies would be the best way to mask the beet flavor. I chose a white cake mix to ensure a vibrant color. I used Annie's Organic Confetti Cake Mix, mostly because it was what I had on hand, but also because of it's light color and healthier-than-some ingredients.

Ingredients:

  • 8oz cooked beets
  • 1/8 cup of milk
  • 21oz boxed cake mix (use white or yellow cake to preserve the red color)
  • 1 egg
  • 1/2 cup chocolate chips
  • 1 1/2 tsp coconut oil

 

Instructions:

  1. Blend cooked beets and milk until a thick puree is formed. It should not be runny like liquid, but should be able to be poured out of your blender. Mine yielded 1 1/4 cups of puree.
  2. Mix egg with 1 1/4 cups of beet puree.
  3. Gradually add the cake mix.
  4. Chill dough for 30 minutes in the refrigerator. While dough is chilling, preheat oven to 350.
  5. Line a baking sheet with parchment paper.
  6. Using a tablespoon or small ice cream scoop, form balls 1 1/2 inches apart on your baking sheet. The dough will be sticky and the cookies will expand in the oven.
  7. Bake for 20 minutes or until cooked through. (Tip: cook on a lower rack to prevent sticking)
  8. Let cookies cool for 15 minutes.
  9. Microwave chocolate chips and coconut oil in 30 second intervals until chocolate is completely melted.
  10. Fill plastic sandwich bag or icing piping bag with melted chocolate. Cut a tiny hole in the tip.
  11. Draw circles and lines across your cookies to create the Spiderman look.
  12. Chill in fridge to let chocolate harden and enjoy!
