Looking for a toddler-approved breakfast with veggies and no added sugar? You're in luck! These pancakes are delicious and get all their sweetness from bananas and sweet potatoes. The batter yielded perfectly browned pancakes that my nanny kids gobbled up in less than 24 hours. We sampled them plain, with blueberries, and with chocolate chips. We were surprised that we favored the plain pancakes over those with add-ins. We also tried these with and without adding cinnamon to the batter. If your kids prefer more bland food I'd recommend leaving it out, but we definitely liked the cinnamon pancakes more. I hope your kids love these pancakes as much as we did!
Ingredients:
- 2 bananas
- 1 cooked & peeled sweet potato
- 2 eggs
- 1/4 - 1/2 cup milk
- 1/4 cup flour
- 3/4 tsp baking powder
- (optional) 2 tsp cinnamon
- (optional) chocolate chips or blueberries
Instructions:
- Mash bananas and sweet potato
- Whisk eggs in with mashed mixture
- Fold in flour, baking powder, and cinnamon
- Add 1/4 cup of milk, gradually adding more until batter reaches desired consistency
- Heat nonstick frying pan on medium heat
- Spoon batter onto pan and sprinkle with blueberries or chocolate chips if desired
- Cook pancakes until bubbles form, flip and cook until browned on both sides
