Sweet Potato Banana Pancakes

Looking for a toddler-approved breakfast with veggies and no added sugar? You're in luck! These pancakes are delicious and get all their sweetness from bananas and sweet potatoes. The batter yielded perfectly browned pancakes that my nanny kids gobbled up in less than 24 hours. We sampled them plain, with blueberries, and with chocolate chips. We were surprised that we favored the plain pancakes over those with add-ins. We also tried these with and without adding cinnamon to the batter. If your kids prefer more bland food I'd recommend leaving it out, but we definitely liked the cinnamon pancakes more. I hope your kids love these pancakes as much as we did!

Spiderman Beet Cookies

It can be hard getting kids to try new foods, especially something as earthy as beets. I'm constantly trying to come up with different healthy foods to introduce into my nanny kids' diet. Whether it's a new vegetable, a protein or a healthy fat, they're always skeptical. I use certain foods like spinach, sweet potato and avocado in so many recipes, but I was motivated to do something unique this week. Which brings us to the beets. It was Spiderman's biggest fan's second birthday and I wanted to make a Spiderman themed treat. Beets can act as a natural dye, so I started brainstorming a way to create tasty, beet-packed cookies.

Spinach Banana Bars

It's tough getting kids to eat veggies, but I have had so much success with these banana bars! They're always a huge hit. I've started making double batches because they disappear so quickly. This recipe doesn't have any refined sugar and will give your child a healthy serving of spinach.
